8" Kiritsuke Knife

A cross between two different Japanese chef's knives, the gyuto and the yanagi. It's longer than the gyuto, but with an angled tip unlike the yanagi. The kiritsuke is an excellent slicing knife that is used mainly for thinly slicing fish, vegetables, and fruit, using push/pull cutting.

8" Slicing Knife

The blade is more flexible and longer than a regular carving knife. Slicing knives are perfect to cut thinner slices of roast, fruits and vegetables.
