CEYLON TEA
Ceylon tea is used to describe various types of tea that are grown and processed in Sri Lanka - formerly Ceylon. Black Ceylon teas are characterized by a medium-strong, tart, slightly malty, fresh taste that is partly reminiscent of citrus fruits. They are economical and relatively insensitive to hard water. Ceylon tea is rarely offered as green teas and extremely rarely as white teas.

NUWARA ELIYA TEA
Just as Nuwara Eliya is unique, so is its tea. The scent of cypress, menthol, wild mint and eucalyptus floats through the air and contributes to the characteristic taste of the tea. Recognized tea connoisseurs agree that Nuwara Eliya, with its cultivation locations of 2000 meters above sea level, is for tea what Champagne means for sparkling wine. This tea - light in the cup with exquisite taste and aroma - is the most preferred tea among tea connoisseurs worldwide.

GREEN TEA
The green highland tea offered here is a real specialty and rarity. Coarse leaves give the tea its light green-gold color. Very mild, tasty and easily digestible. Green tea is a way of making tea. Unlike black tea, the tea leaves are not fermented. Because of the different processing, the leaves of Camellia sinensis are preferred to the assamica variety for green tea, as the small-leaved, more tender variety is better suited. Green tea differs from black tea, among other things, in the preparation, taste, ingredients and effects of the infusion.

MEDICAL EFFECTS (not to be understood as promises of healing)
The medical efficacy of green tea has now been investigated in over 100 clinical studies worldwide. However, many studies are difficult to compare. A large number of studies have now shown that regular consumption of green tea or green tea extracts has many health-promoting and preventive effects.

Many of these positive effects in obesity, diabetes, inflammation, Parkinson's, Alzheimer's and heart diseases result from the epigallocatechin gallate (EGCG), which is particularly abundant in green tea or extracts. A study from 2014 found that epigallocatechin gallate of green tea potent inhibits the 11 β-hydroxysteroid dehydrogenase 1, thus less cortisol is available and this could possibly explain some of the health-promoting properties of green tea.

In the so-called Ohsaki study carried out in Japan and running for 11 years with 40,530 adults between the ages of 40 and 79, it was found that the drink has positive cardiovascular properties and thus has a life-prolonging effect. Accordingly, the death rate fell among male test participants who drank at least five cups a day by 12 percent, and among women by 23 percent. Deaths due to cardiovascular diseases were particularly rare, and this was also more pronounced in women (31/22 percent). A reduction in cancer mortality was not found in this study.

PREPARATION
When brewing green tea, water with a temperature of no more than 90 ° C should be used, as water that is too hot makes the tea bitter to inedible, depending on the variety. The water shouldn't be colder than 50 ° C. As the temperature rises, the solubility of most of the tea ingredients improves - if the draw water is too cold, the ingredients cannot be dissolved in the infusion. For many varieties, 70 ° C is the right temperature for making tea. If you drink green tea for health reasons, please note the following: The heat-sensitive vitamin C contained in tea improves the absorption of the health-promoting polyphenols. On the other hand, scalding with hot water at 95 ° C and a longer steeping time (10 minutes to 1 hour) improves the extraction of the polyphenols. Then it is advisable to add a little lemon juice to the cooled tea to increase the vitamin C content. You can infuse green tea several times. However, it should be noted that hot water should be used for further infusions and the steeping time should be shortened
