A tajine or tagine is a name for both the traditional Moroccan dish and the earthenware pot in which it is cooked. The earliest references to cooking in a tagine appear in the famous One Thousand and One Nights. The traditional tagine pottery, which can be plain, painted or glazed, consists of two parts: a circular base unit that is flat with low sides, and a large cone-shaped cover that sits on the base during cooking. The cover is designed to return all condensation to the bottom.
