Central Asia traditional dried cheese

Kurt is made from sheep, goat or cow milk. First, curdled milk is prepared, which is placed in a gauze bag and hung for a couple of days, allowing the whey to drain.

The result is a product that looks like cottage cheese. It is salted and rolled into small balls, no more than 5 centimeters in diameter. Then the cheese is spread on a flat surface and left to dry in the sun.
