The core shape is straight through (the entire handle = full tang), and the cap is welded. The black plywood handle material is a durable, water-resistant material, and is securely caulked in three places. This is a commercial knife with a structure that can withstand hard use.
"Sujihiki 240mm" is a style with a special shape that is suitable for cutting beef fillet by making use of its thin and long blade. It is also useful for slicing sashimi, slicing carpaccio, etc., and cutting fruits, sweets, and sandwiches.
