New old stock 11 inch Sabatier Heavy Chefs Knife . CARBON STEEL , with a blackwood handle . Hand ground , hand fitted and , hand finished . Made in Thiers France in the 1950s . This is a heavy model with a larger handle and thicker spine . ( See the comparison to a standard 11 inch Nogent   of the same period from my collection( See photos ) . This is only the third one I have been able to get my hands on . I kept the first on because I had never seen one before and I use it on a daily basis .
