Note Carbon Steel will rust if not properly cared for and will discolor or develop a patina with use . But carbon steel takes and holds a sharper edge than stainless , though modern stainless is nearly as good without the extra care to keep dry and oiled . But for the purist carbon steel is the way to go . Made in Theirs France by K Sabatier a family owned business since 1834 .
