Lift after the first frost cut off the stems leaving about 1- 2" of stems,  store in a frost free environment, take off remaining dirt, leave to dry for a while, cut off straggly roots leaving tubers intact

Each stem can be separated into a new plant which is better for the  growth of the original plant
