George studied at the Layton School of Art in Milwaukee and then graduated from the Art Institute of Pittsburgh. He then traveled to Chicago to study under Frederic Mizen, then the dean of American portrait artists and illustrators. George would do the cover portraits of entertainers such as Jackie Gleason, Janet Leigh, Patti Page, Bob Cummings, Giselle MacKenzie, Frank Sinatra and paint portraits of five Presidents, U.S. Supreme Court Justices, Senators, Congressman, Generals for the Pentagon and four Wisconsin Governors. Pollard was staff artist for the Milwaukee Bucks and Milwaukee Brewers for 25 years and painted hundreds of outstanding professional athletes.  In 1981 this portrait of Mother Teresa eventually led to George being the only American artist commissioned by the Vatican to paint the official portrait of Pope John Paul II.
