Indonesian Bourbon Vanilla are long and very fragrant. The scientific name is Vanilla Planifolia or Bourbon Vanilla, the same variety with madagascar Vanilla bean. 

The distinctive curing process used in Indonesia contributes to a deep smoky, cherry, oak, woody flavour that go well with deeper flavors like Chocolate. It also holds up remarkably well in heat application.

The grade B Vanilla Pod are often considered a more budget friendly option than Grade A while still providing a good vanilla flavour experience. 

While the vanillin content and aroma is the same with grade A, Grade B are smaller, less plump and less moist but priced much economically. It is the bean of choice when the appearance of the bean is not important such as making Vanilla extract and everyday baking and cooking. The flavor: smoky, Cherry, Oak, Woody flavor.
