Brand new 8 inch chefs knife. Made a VG 10 steel, extremely sharp edge beautiful Damascus pattern. Unbranded version compare to Dalstrong.

VG-10 Steel is one of the top stainless steels in the knife making industry. It is fairly easy to sharpen, has great edge retention, and takes a very keen edge. This supersteel comes from Japan, and then is heat treated to approximately 60 on the Rockwell Hardness Scale. This provides excellent edge retention, while less prone to chipping and easier to sharpen then harder steels. This knife's design is more like a German knife, but with better steel. At 270 grams, this knife means business. Thickness at the heel cuts with a wedge type action. The tip is thin enough to do detail work, but befits from thinning with the initial sharpening. The balance point is at the bolster and there is a smooth transition to the G-10 handle. The knife cleans very well, and has a beautiful mirror finish. It really shines next to my traditional Japanese knifes. To extract the maximum capabilities of a high quality Japanese VG-10 super steel, I can thin the tip and apply a custom edge with Japanese Water stones. I will do this upon request, its a real game changer if you have never experienced a professionally sharpened knife. Sharpness is far superior to out of the box sharpness.
