Alfalfa
Alfalfa sprouts contain, among other things, vitamins A, B2, C, D and niacin as well numerous minerals such as magnesium, iron, all 8 essential amino-acids, protein, chlorophyll and fibres.
Fenugreek
Fenugreek sprouts contain, among other things, vitamins A, B1, B2, B5, D, a great deal iron and phosphorus, niacin.
Broccoli
Broccoli sprouts are rich sources of vitamins A, B, C, E and K, anti-oxidants, the minerals iron, calcium, phosphorus magnesium, potassium and zinc as well as flavonoids, iso-flavonoids, carotene, chlorophyll, amino acids, polyphenols, trace elements and antioxidants. Broccoli seed sprouts contain as much as 35% protein.
Cress
Cress sprouts contain, among other things, vitamins A, B1, B2, B3, plenty of vitamin D and C, essential mustard oils, potassium, calcium, iron, niacin, iodine and phosphorus.
Red Clover
Red Clover contains vitamins C and E as well as essential oils, minerals and phytoestrogens which are classed as secondary vegetable matter. Red Clover is particularly rich in isoflavones witch have great affinities with female estrogens.
Sunflower
Sunflower sprouts are a great source of calcium and iron. They're also high in fibre and contain a wide range of other vitamins and minerals including Vitamin A, B Vitamins, C, D, and E.
Kale
Kale sprouts contain, among other things vitamin C, folic acid, calcium, B vitamins. They also contain potassium, iron, and phosphorus.
Buckwheat
Buckwheat sprouts are high in iron so it is a good blood builder. They contain high boron and calcium levels. Buckwheat microgreens are high in bio-flavonoids and co-enzyme Q10. They contain all of the B vitamins, magnesium, manganese, and selenium, as well as many other health giving compounds.
Rye, Wheat, Oat, Barley
Grain sprouts contain, among other things, vitamins C, B1, B2, B3, B6 and plenty of vitamin E, folate and beta-carotene. They also contain potassium, plenty of calcium, iron, niacin, iodine, manganese, phosphorus and zinc.
In addition, during germination there is a sharp increase in the vitamins content of sprouts; moreover, carbohydrates, fats and proteins are partially broken down, increasing their digestibility and making the nutrients in the grains more readily available to your body.
