Maitake (Ram mushroom, dancing mushroom, Thick-lined tinder, Leafy tinder), lat. Grifola frondosa is an edible mushroom, a species of the genus Grifola of the Fomitopsidaceae family.

Grifola curlya, not without reasons also called the ram mushroom, is a thick bushy growth of mushrooms, with rather expressive legs that turn into letter or language caps. The legs are light, the caps are darker at the edges, lighter in the center. The general color range is from gray-green to gray-pink, depending on age and lighting. During lifting, the surface of the caps and the upper part of the legs is covered with a fine spore-bearing layer.

The hat is fleshy and stable, wedge-shaped narrowed in the leg, with a radially wrinkled, rough surface, with an uneven, wavy or bladed edge. The meitake fruiting body reaches 1 m in circumference and up to 18-20 kg in weight and consists of numerous flat, thin, semicircular or spade-shaped caps with a diameter of 0.5-5(10) cm, sitting on repeated twigs that merge into a common base. The flesh is white, quite brittle, has an interesting nutty smell and taste.

Mushroom mutton is very good in soups, broths and stir-fries, and is also a great filling for dumplings. It is also used dried (in powder form).
