In the olden days, every sake brewery in Japan used to put the mash in these bags and press them by hand one by one. Imagine that.

It is a very labor-intensive process.


Naturally, the fabric needs to be strong, so they use persimmon tannin-dyed canvas. The wisdom of our ancestors is amazing. Every summer, they used to dye the fabric in layers. Therefore, the darker the color, the longer the history of the sakabukuro, and the texture differs from one sakabukuro to the next.
