Tiger Nut Flour Pancakes

Ingredients:

• 2 eggs
• 1/4 cup Anthony's Coconut Oil, melted
• 1/3 cup almond milk
• 1 tablespoon Anthony's Coconut Sugar
• 1/2 cup Anthony's Tiger Nut Flour
• 2 tablespoons Anthony's Coconut Flour
• 1/3 teaspoon baking soda
• 1/4 teaspoon salt

Instructions:

1. In a mixing bowl, combine the eggs, coconut oil, almond milk, and coconut sugar; mix well.
2. Add tiger nut flour, coconut flour, baking soda, and salt; mix well.
3. Cook on a hot greased skillet in 2 tablespoon portions until golden brown on each side.
4. Serve and enjoy!

Cook time: 10 minutes

Tiger Nut Flour Brownies

Ingredients:

• 3/4 cup Anthony's Tiger Nut Flour
• 1 cup Anthony's Blanched Almond Flour
• 1/3 cup Anthony's Coconut Oil
• 1/2 cup Anthony's Coconut Sugar
• 1/4 cup coconut cream
• 1/3 cup Anthony's Cocoa Powder
• 1/2 teaspoon salt
• 1/2 teaspoon Anthony's Xanthan Gum
• Preheat oven to 350° Fahrenheit and grease a 8"x8" glass baking dish.

Instructions:

1. In a food processor, combine tiger nut flour, almond flour, and coconut oil.
2. Process until buttery.
3. Transfer to a small saucepan and add coconut sugar, coconut cream, and cocoa powder.
4. Heat and stir over medium heat until melted and mixed.
5. Transfer to a mixing bowl.
6. Add salt and xanthan gum; mix well.
7. Spread evenly in prepared baking dish.
8. Bake for 20-25 minutes.
9. Cool, cut, and enjoy

Tiger Nut Flour Cinnamon Rolls

• 3/4 cup Anthony's Tiger Nut Flour
• 1/3 cup Anthony's Coconut Oil
• 1/4 cup Anthony's Coconut Sugar
• 1/2 cup almond milk
• 1 teaspoon Anthony's Xanthan Gum
• 1-1/2 cups Anthony's Blanched Almond Flour
• 1/2 teaspoon baking soda
• 1/3 teaspoon salt

Filling

• 3 tablespoons Anthony's Coconut Oil
• 1/3 cup Anthony's Coconut Sugar
• 1 tablespoon cinnamon

Icing

• 3/4 cup Anthony's Blanched Almond Flour
• 1/4 cup Anthony's Coconut Oil
• 1/4 cup Anthony's Coconut Sugar
