The word Chipotle comes from the Nahuatl for chilpoctli, meaning smoked chile, which speaks of the antiquity and tradition of this technique. As the name suggests, smoking is a method that involves placing foods in contact with smoke, this gives them a unique flavour and aroma. Unfortunately this cooking technique is used less and less, being replaced by chemical processes. For that reason, La Morena is distinguished by maintaining artisan and natural processes with unique methods to produce chipotle peppers.
Chipotles are smoked Jalapeños and add a wonderfully rich, smokey flavour to a wide variety of dishes, barbecue sauces and chicken. They make fantastic marinades, salsas, mayo and soups. You can use them for anything! Recipes that use Chipotles include Tinga, Barbacoa and Camarones a la Diabla.
This is not just a delicious and essential product for traditional Mexican cooking. The presentation of the tin is attractively kitsch, with a handy ring-pull and small enough to store mini cacti once the contents are empty :)
