Cheng-fa Tea Store opened in 1860 and is owned by Yen Tsan-cheng, a 90 year old man who has been working in this tea shop for his whole life.

He is the 4th generation to run the shop. It's a tradition that will stay with the family. The shop uses a traditional tea paper packaging that is no longer used by any other tea shop in Taiwan. The packaging is marked with antique red seals of store's name and blue stamps to label the tea. This paper packaging dates from the years between 1821 and 1850.

 

Jin Xuan 金萱 is a variety of Oolong tea developed in 1980. The tea is also known as #12 or as "Milk Oolong". It originates from Taiwan. The taste is light, creamy, and flowery and sometimes compared to milk. This tea variety can be grown at higher altitudes, and the yield is about 20% higher compared to traditional tea varieties. These circumstances made it become one of the most popular varieties among tea farmers in Taiwan.

 

Brewing

 

 

Warm up the tea pot with the boiling water, put about 3 grams of tea, and pour small amount of the boiling water into the tea and pour out. Then pour 225-250 ml of boiling water and cover tea pot for 3-5 minutes before serving. Boiling temperature is 90-95°C (195-205°F).
