"An enjoyable fresh flavour and a good heat. The scotch bonnet works well against this background and its heat builds quickly to a lasting plateau. The flavours give freshness, lovely green notes and a citrus zing alongside the lasting fiery heat."

Based on the original sauce recipe, this was developed from the need to use the green scotch bonnet chillies when purchasing in bulk. A fresher taste from the use of spring onion and more cucumber with hints of zesty aromas coming from the lime juice. 

It is commendable that the cucumber provides its aroma and taste so well as it can easily become too watery and lose any impact. The flavours give freshness, lovely green notes and a citrus zing alongside the lasting fiery heat.
