Use dark vanilla when making cookie dough, egg based creams, chocolate sauces and so on, which won't be affected by its dark color, since the foods themselves are already dark. The clear vanilla is great to use in foods that you want to keep as white as possible, such as: whipping cream, meringue, icing and so on.
