Miracle Berry has been known and used for centuries. It originates from West Africa . The common name of the plant, i.e. MIRACLE FRUIT, comes from the extraordinary properties of the protein it contains - MIRACULIN.

MIRACULIN

SOUR = SWEET - that is the simplest way to describe the extraordinary properties of Miraculin. This naturally occurring protein (glycoprotein) in Miracle Berry fruit binds to the sweetness receptor of taste buds 400,000 times stronger than sugar (sucrose).

Miraculin allows you to literally sweeten your dishes with lemon.

Unlike other sweeteners, it is not added to food, but dissolved on the tongue so that you can enjoy sweets without remorse for up to 2 hours.

How does it work?

Mirakulin does not sweeten the food but alters perceived taste by directly stimulating the sweet taste receptors with which it is temporarily bounded (it literally "sweetens" the tongue). The acidity of the food activates hte Miraculin in response to any changes of the pH in the mouth. The lower the pH is (i.e. the more sour the food) the sweeter it will taste. To achieve this effect, it should be dissolved on the tongue.

Immediate effect of taste transformation lasts from 30 minutes up to two hours. After the Miraculin particles are washed out by saliva, normal taste sensation returns - without any side effects. The effect can be previously neutralized by hot drinks - e.g. tea.
