For the preparation of these candied chestnuts, only the best
ingredients have been selected: chestnuts, sugar, glucose, Bourbon
vanilla pod from Madagascar. Maison Corsiglia candied chestnuts are made by
candying under tulle, which involves manually wrapping the raw
chestnuts, two by two, in tulle muslin, in order to keep the chestnuts
whole, to obtain a pearl of syrup in the heart of the fruit and to
preserve the subtle taste of chestnut. This traditional know-how, a true
criterion of quality, makes Maison Corsiglia the specialist in Marron
Glacé. In 1870 André Corsiglia began his career as a master confectioner
in New York alongside his uncle Giovanni Batista Raffetto. Back in
France, in 1896 he inaugurated his first manufacturing workshop in
Marseille. This is where the House acquired its letters of nobility, in
particular thanks to its candied chestnuts. Since then, four generations
have passed and Maison Corsiglia continues to combine respect for
tradition and innovation, as evidenced by the numerous patents filed to
improve the process of making candied chestnuts.
