Fleur de sel is made up of light, reed-shaped crystals of extreme whiteness that form on the surface of small pieces of salt, forming a thin film of salt that covers them. This “film” is harvested daily with a squeegee (manual harvesting tool) and requires perfect weather conditions. The great advantage of Fleur de Sel is its flavor, or rather, the flavors it brings out in food. Flor de Sal should be used after cooking, before serving, to fine-tune the seasoning, or at the table for those who like a little more salt, replacing the tasteless refined salt.
