The book begins by defining a Cajun, then tells you how to cook rice and make a roux.  THEN are all the wonderful recipes for the produce of sea, bayou, and garden.

     Roger discovered that traditional Cajun dishes can easily be altered to make them healthier by reducing fat and cholesterol.  He has substituted turkey and crawfish for some meats and used egg whites instead of whole eggs.

 

Comb-bound softcover book in Like New condition.  Book is bright, clean, securely bound, and the pages have no writing. Plastic comb has no cracks.  Covers are glossy, with a little wear at edges and some spots and a sticker shadow on back.  6 x 8 ½ inches, 127 pages.  [22477-2305]
