No more guessing how much pressure to apply! The space between the rods is 9". This allows for the biggest size molds as well as a stainless cheese drip tray to be used. Apply calibrated pressure of 5, 10, 15, 20, 25, 30, 40, 50, 60 lbs. and up to 100 lbs. if needed for stubborn cheese that will not knit well, something that most spring cheese presses do not offer, especially  at this low price. The pressure needed can be precisely applied with the stepped gauge provided. The base, pressure plate and compression plate are made of hardwood (either maple or cherry or a combination of both) Use one spring on the center dowel to apply from 5 to 40lbs of pressure or use 2 springs on the threaded rods to reach from 40 to 80 lbs. and more. Should the tall rim of the follower sink below the mold rim, a can of tuna or corn can be positioned on the follower to continue the pressing. Easy as pie!
