Vintage Chitarra Mandolin Pasta Cutter Double Sided Metal/Wood
Spaghetti alla chitarra comes from this tool, the so-called chitarra, literally "guitar", giving the spaghetti its name, shape, and a porous texture that allows pasta sauce to adhere well.
The origin of the chitarra is still not very clear, though a traditional recipe from Italy originated in the early 1800s or even before.
The dough is rolled flat, then placed on the chitarra and pushed through with a rolling pin, so that the strings of the "guitar" cut it into strips. Pasta makers bring down the cut dough by passing their fingers over it, as they would "play a guitar"
This beauty measures about 20 inches long by 9 1/2 inches wide by 4 inches thick, weighing 5 pounds. The gap between strings is approximately 2.5mm on one side and 3mm on the other.
