A brief glossary of  a Young Cheese Maker: 


Microbial Rennet: is a enzyme agent caused the milk turn into solid curd that delicious cheese can be very easily made of. 


Calcium Chloride should be added to milk  to increase cheese production efficiency it improves the consistency and coagulation of milk, simultaneously enriching it with calcium. Its use decreases the loss of fat and casein (main milk protein). Do not overdose the calcium chloride so as to avoid a bitter aftertaste of the cheese.


Cheese Making milk should be low-temerature pasteurized i.e. raw milk pasteurized at 72-74 C for 15s then cool down to 30-31C. Under no circumstances it can be UHT milk. 


Brine preparation method: 40g of salt 2l of water 1 l of whey( the liquids remaining after straining the cheese)
