Yoshimune employ a number of skilled traditional artisans to hand forge their knives in the historically rich knifemaking region of Tosa, Japan. Unlike other brands which divide the labour into stations, Yoshimune’s craftspeople work on a single knife from the forging, right through to grinding and polishing. This makes their knives unique, a true expression of their maker’s artistry.


Condition - good. The kurouchi finish is a little faded near the bevel. The knife arrived with rough finishing on the bevels and quite sharp around the choil. The choil edges have been ground smooth for a more comfortable grip. The bevels have been polished smooth and finished with a fine whetstone. Sharpened and ready for use.


About the shape - Nakiri is considered a useful knife to cut without splitting or cracking relatively hard vegetables, popular among vegetarians. Nakiri is a double bevel edged knife to efficiently cut, slice, and mince vegetables. Though the nakiri is often mistaken for a mini Chinese cleaver due to its flat, rectangular, and thin blade, it cannot be used to cut tough materials like bones.
