Here's a 10 pack lot of Lalvin 71B (Formerly 71B-1122) also known as the "Narbonne" strain, which is a semi-dry white wine yeast that will enhance fruit flavors and add fruity esters. Lalvin 71B is a wine yeast for nouveau-style new wines. The outstanding yeast for use with both red and white juice concentrates. Excellent for use with whites, roses, and nouveaus like Beaujolais. A rapid starting, low foaming, and constant fermenting semi-dry white wine yeast, ideal for fermenting wine kit concentrates. Limits phenol extraction and may neutralize up to 40% of malic acid, producing smooth rounded "nouveau" wines that will mature quickly. 59°-89° F (15°-30°C) Alcohol Tolerance: 14%.
71B is a reliable yeast for cidermakers. It can reduce acidity (consume malic acid) substantially, which is a real help if you're working with sharp apples. It almost never produces H2S (rotten-egg), even with low-nutrient fermentations.
71B Is excellent for meads, and outstanding for fruit meads. Leaves a nice floral / fruity aroma with a slight residual
sweetness.
71B was selected in Narbonne at the Institut National de Recherche en Agriculture (INRA) by J. Maugenet. The selection was designed to isolate yeasts that would produce a fruity yet fresh character in wine that would live long after fermentation. In addition to producing rounder, smoother, more aromatic wines that tend to mature quickly, it does not extract a great deal of phenols from the must so the maturation time is further decreased. The 71B is used primarily by professional winemakers for young wines such as vin nouveau and has been found to be very suitable for blush and residual sugar whites. For grapes in regions naturally high in acid, the partial metabolism of malic acid helps soften the wine. The 71B also has the ability to produce significant esters and higher alcohols, making it an excellent choice for fermenting concentrates. Also a good choice for late harvest wines.
