Copper graters have a long history, and the encyclopedia of the Edo period, which was compiled in 1712, called "Wakan Sansai Zukai," already has the same shape as it is today.

A craftsman carefully raises the blade at a glance using a tool called a chisel and a mallet on a hard pure copper plate plated with tin. This ancient manufacturing method is the reason why copper graters continue to be selected today.

Since the blade is "irregular", it can be easily lowered with a light force.

The blades made by craftsmen are not uniform when you look closely.

With a machine, the blades stand up uniformly and do not change, but because they are made by hand by craftsmen, the intervals and height can be slightly irregular.

Therefore, each time you grate it, various surfaces hit it, and you can grate it smoothly with a light force without changing the direction of the radish many times.

In addition, the blades lined up in the opposite direction are attractive because they can be cut lightly by pushing or pulling.

Good texture and flavor from "grated" instead of "ground"

-Rough surface that is perfect for making big things such as grated radish- Commercially available plastic radish graters "grind" ingredients because the blades have no corners. On the other hand, the blades that the craftsmen stand by hand are, so to speak, small blades. Since the radish is not "ground" but "cut", the cells that are the source of deliciousness are not crushed. As a result, the flavor is good, the water and fiber do not separate, and even after a while, a fluffy and fresh grated radish that contains plenty of water can be produced.

-The back side of the fine eyes that are perfect for condiments- Also, since the fibers of the ingredients are cut into small pieces with the blade raised by the craftsman, if you grate it on the back side, the mouthfeel of grated radish will be mellow. Condiments such as wasabi and ginger will not spoil the flavor. You can easily make a different condiment that you can find at a delicious restaurant at home.
