Simple Peach Gum Dessert Recipe:
1) Soak two tablespoons of peach gum in water overnight. It would expand to 10 times its size. To remove the impurities, which are actually small pieces of bark or specks of black stuff, rinse the jelly-like gum until it is sufficiently clean. Drain the water and leave them aside.
2) Wash and rinse the dried red dates and longans. Pour 2 litres of water into a pot. Add the dried red dates and longans, boil them for 30 minutes, then simmer for another 30 minutes. Filter.
3) Add the soaked gum, ginger (optional) and rock sugar. cook for 20 minutes.
4) Set aside to cool before serving. You may leave it in the fridge for a chilled dessert.
