• SPECIFICS: Late - season red chile pods are handpicked in the fields.  This chile is sun-dried and ground into coarse, vibrant red pieces with a sweet, earthy, bold, spicy intensity.  The drying process concentrates the flavor and heat of the Chile.
• USES:  Use for making red chile sauce - a staple in Mexican and New Mexican food.
