From the cookbook's History:  "Eureka Springs began as a health spa, springing to life suddenly, much like western gold rush towns.  The early settlers founded a new city around the healing waters of Basin Spring and some 60 other springs in the vicinity.  The original settlement was a cluster of wagons and tents, then hundred of rough frame houses took their place as rapid growth continued.  Visitor today still arrive in large numbers, seeking relaxation and recreation.  Preservation of the fine late Victorian architecture is an ongoing concern, while the town offers modern facilities to a flourishing tourism business." 

It's interesting to note that, in1910, the initial request to fund the building of The Carnegie Public Library -- which was awarded and funded by then millionaire philanthropist, Andrew Carnegie -- came from a visitor to Eureka Springs, and not a resident.  One might say there was something to like about Eureka Springs, and this collection of recipes contributed by the people of Eureka Springs to help their library is likely something to like as well.
