Heather honey is a pure natural product from Norwegian forest and hay areas, and is produced when the bees collect nectar from blooming whistle, (Calluna vulgaris), during the period July - August. Heather honey is usually golden reddish brown, with a solid, slightly gelled texture. The taste and aroma are rich, spicy and slightly bitter.
