Comments: AROMA/FLAVOR: Brown sugar, dark chocolate, anise, almonds, sweet bread. ACIDITY: effervescent lemon, intense. OTHER: Tasty flavor. Nice, smooth finish.  Classic Bolivian profile, naturally sweet, with just enough lemony acidity to remember it and want more. Great for breakfast brew.

These selected, high-altitude, green (unroasted) coffee beans come from the high-altitude Montana Verde Cooperative, located in the Caranavi Province, La Paz Department, Bolivia Plurinational State. It was individually harvested by the Cooperative members and processed for export at the Cooperative's Mill. The coffee beans are 100% Specialty Arabica (Tipica 90%, Caturra 10% varieties) These coffee beans were  depulped and washed using pure Andes mountain-spring water, sun-dried on wooden table tops and hand selected by "Palliris" (Aymara Indian women food graders). They were stored and shipped in GrainPro® bags from origin.

This fixed-price sale is for ten (10) pounds of a professionally graded and cupped, Specialty, Fair Trade Organic (FTO) coffee.

These coffee beans will be shipped to you in a boxed, plastic bag.  We used to ship 10-lbs coffee in burlap bags.but alas, it is no longer possible to source food-quality small burlap bags.

We have also updated our thinking about coffee storage. These green coffee beans can be stored in a cool, dry location, in the plastic bag supplied, for a long period or time (years) without any loss in flavor or quality because they are grown at high altitudes (which makes a hard bean) and below the Equator.  Beans grown above the Equator (Colombia, Mexico, Central America, Hawaii, etc.) do not keep as well.

Because of its sweet, ripe tropical fruit flavor with hints of chocolate, refined acidity, good balance, and no aftertaste, we prefer a moderately dark (#45 Agtron/SCCA) roast for these coffee beans.  However, other roasters prefer it darker-roasted.  Some roasters drink it as a single-terroir, others use as a mandatory component of their special "house" blend.  Try all combinations and decide!

These coffee beans are certified organic by Baystate Organic Certifiers (an USDA agent), and certified Fair Trade by TransFair (USA).  A copy of the organic certificate (TOC) is available, upon request. Our Fair Trade® Certification (FLO) ID number is 20629

What is "Specialty" coffee?  There are two major species of coffee, robusta and arabicaRobusta is grown at low altitudes, under full sun, has almost twice as much caffeine, and is the main ingredient of cheap, flavorless, "blended" commercial coffee available everywhere.  Arabica, grown at high altitudes (4,000 to 6,500 feet) with abundant rain fall, warm temperatures, fertile soil and adequate shading develops superior coffee flavors.  Picked by hand only at the peak of ripeness, these arabica beans are processed with care and meticulously graded and separated by bean size and density.  All of the world's great coffees are 100% arabica, but only the top 20% have fine enough flavor to be selected as Specialty coffee.  The fine flavor is determined by the cupping score.  To be considered Specialty, the cupping score must be at least 80, using the SCAA criteria.

What is "Premium" coffee?  According to the SCAA Standard Classification Method, arabica green coffee beans are graded according to Category 1 and Category 2 defect equivalents.  Specialty coffee cannot have any Category 1 defects and may only have up to five Category 2 defect equivalents.  Premium coffee may only have up to eight defect equivalents of either category.  Graded coffee with more than eight defect equivalents is considered "commercial" or "below grade".  After cupping, the remaining 90% of the fine arabica coffee, with still superb flavor, is considered Premium coffee.

What is "Conventional/commercial" coffee? The remaining coffee, the majority of which is traded in the commodity markets, is considered "conventional, commercial" coffee.  It includes all robustas and the lower-quality arabicas.

What is "cupping"?  It is a professional technique for evaluating coffee's Fragrance/Aroma, Flavor, Acidity, Body and Aftertaste. To be considered Specialty or Premium, coffee must exhibit distinct attributes in these five areas. Moreover, such coffee must be free from odors, faults and taints.

We cup, roast and drink our own coffee everyday.  Most of our customers are amazed how good this coffee is and no longer buy Bolivian, Brazilian, Colombian, Costa Rican, Decaf and/or Cup of Excellence coffees from anyone else.  Feel free to contact us if you have any questions about coffee and about coffee roasting.  All questions are welcome and answered promptly.

Coffee Grading:  We are the rare coffee importer that objectively and professionally grades all its coffees and publishes all its prices online. Our green coffee beans are cupped, graded and categorized before they are offered for sale.  Let's face it, not all coffee is the same, and not all coffee from a single country (or even a single region) is the same.  The only way to ensure consistently high-quality coffee is to buy professionally graded coffee from a seller that not only talks the talk but also walks the walk and grades all its coffees.  Unlike some coffee sellers that claim that their coffee is "top grade" or "the best of the best" without any documentation or proof, we undergo strict coffee grading.  Using the objective and strict SCAA criteria and our own criteria, throughout the year we regularly visit coffee farms, processing, transporting and warehousing facilities in order to complete our grading and classification.  We buy at quality-auctions and also at the farm gate (using our own trucks) and we are always cupping, cupping and cupping.  Because "specialty coffee" covers a very broad spectrum and there are no further standards for it, we have created our own categories and groupings.  We hope they will eventually become the industry standards

We present the results of the grading process, under our "Coffee Specs", which is the first thing you see on our listings.  The most important factors determining the quality of coffee are bean varietal (whether Arabica or Robusta); bean uniformity and density; altitude grown; soil quality; care and technique in growing, processing, handling and transporting.  The ultimate "proof is in the pudding" criteria, of course, is the cupping score.  So next time you buy coffee, don't just take your seller's word for it, ask for objective grading results.  When in doubt, just cup a random sample. That is what we do every day.

Shipping Policy & Charges:  We ship the same business day payment is received, if payment is received before 2:00pm (EST).  Otherwise, we ship the following business day.   In the US (to all 50 states), these beans will be shipped for free via USPS Priority Mail®.  We use this shipping service, instead of lower-cost Parcel Post, because it offers delivery confirmation, which we need to respond to non-delivery claims. The additional cost for the better service is nominal.  We ship worldwide.  There will be no "brokerage fee" on shipments to Canada. We ship to the address on record with the payment account (PayPal or credit card).
