NO MORE DIFFERENTIAL TAKEN APART TO TRY DIFFERENT SHIM COMBINASONS!!!
The bigger diameter shims are oversized and slitted so they pass over the T-bone cups and then compress in the diff casse to the right size.

The smaller diameter shims are for shiming the pinion gear towards the differential up to your desired position.

As a start up point (reference only) for a new differencial pinion and gear put one 0.2mm shim on the diff.  
For the pinion assembly: one shim between the pinion gear and the its larger bearing, + one shim between the two bearings.
Once all those shims are in place screw everything back togeter in the diff casse and make sure there is no binding when rotating with your fingers.  Should spin freely with almost no play.  Worn gear and pinion will take more shims.  It is by trial and error that you will find the ideal shim combination.  But at least with those slitted shims you don't have to disassemble the diff each time!!!
