As space missions began to last longer than just a quick trip out of the atmosphere it meant that food was needed which was lightweight and could last a long time. From the early Mercury and Apollo missions, NASA worked on freeze-drying their foods. Freeze-drying is like suspended animation, it keeps the ice cream and other foods totally intact, but removes up to 98% of the water.
