The bacteria consumes sugars and ferments it into a naturally thick, mucus-like substance. That material is then processed into a cream-colored powder. Suitable for Vegans & Vegetarians Gluten Free Non-GMO Halal Kosher Applications Sauces Xanthan Gum is used in sauces to give richness and depth where reduced amounts of fat are used. Xanthan Gum increases the viscosity of sauces and stabilises emulsions, preventing separation. Mayonnaise Xanthan Gum creates a stable emulsion in Mayonnaise whilst thickening and providing a smooth texture. Gluten Free Preparation Xanthan Gum is used in gluten free baking as it is able to provide a similar texture and elasticity to gluten in baked goods. Ice Cream Xanthan Gum is used in ice cream to create a smooth texture, organoleptically resembling fat in lower fat content recipes. Xanthan Gum also prevents formation of large ice crystals, giving ice cream freeze-thaw stability. INGREDIENTS: Xanthan Gum (E415) Our Xanthan Gum is a cream coloured powder used commonly in recipes of food and drink to thicken, stabilise and emulsify. While producing a significant increase in viscosity at low levels of just 1%, Xanthan Gum does not alter the colour, taste or smell of your food (products). Xanthan Gum is soluble in both hot and cold water. How to use: The recommended doses for use in everyday recipes is between 0.05% and 0.5%. Add the xanthan gum gradually into your liquid ingredients whilst whisking. Continue whisking until all the powder has dispersed and no lumps remain. N.B: These are guidelines only. For best results follow recipe quantities and instructions.
