Aiyu jelly seeds 愛玉子 for Making Taiwan Ai Yu Jelly Dessert  愛玉 

Weight: 40g (enough to make 6 Cups (3 LBS) of Aiyu jelly)

Ai Yu Jelly  is one of Taiwan's famous summer drinks and desserts.  The jelly is so refreshing that it's very common to see this sold at the night markets because it makes a great drink to balance the savory night market foods. 

Place all of the Ai Yu Seed (about 20g) in a cloth bag  & rubbed them with 6 cups (8oz each cup) of spring water or drinkable tap water (Do Not use purified water, need the minerals in the water to help forming jelly), within a few minutes, the seeds will be interacting with the minerals in the water, forming  jelly in the water.  Place the jelly in the refrigerator and within 30 minutes, the jelly will be fully formed.  Then you can mix Ai Yu Jelly with a refreshing sweetened lime mixture and serve with ice.  It is recommend to consume the jelly with 1-2 days as the jelly will return to its original liquid form after a while. - MAKE SURE NOT TO TOUCH ANY OIL WHEN MAKING THE JELLY. Jelly would not form when interacting with oil.
