Dongding, also spelled Tung-ting, is an oolong tea from Taiwan. The original leaves were taken from a much older tea plant in China's Wuyi Mountains in Fujian Province. The name Dongding means "Frozen Summit", which is the name of the mountain in Taiwan on which the original tea plants taken from the Wuyi Mountains were planted.

For many oolong lovers, Dong Ding is considered the premium Taiwanese oolong.

The original Dongding is from the Lugu region of Nantou County in central Taiwan. However, this area has long been used for tea cultivation. Production is now scarce and quality varies. Many Dongding teas are now produced from other Nantou high mountain teas and follow the traditional Dongding production method. Dongding is typically medium roasted (about 30%).

Taste:
The naturally sweet, fruity aroma is strong and captivating, while the taste is full-bodied, refreshing and sweet with a flavor that is reminiscent of a mouth-watering peach. Delicious.

Appearance:
Evenly and tightly rolled tea leaves. The infusion is yellowish green in color.

Brew DongDing Oolong tea in Classic Chinese - Gongfu Way:

The traditional brewing way of DongDing Oolong tea is called "Gongfu". Classic Chinese way of brewing DongDing Oolong tea requires lots of preparation prior, while and after brewing the tea. First of all you need the complete traditional Chinese Tea set which includes Sand-Fired pot, a tray, tea holder, Pinming cup, fragrance smelling cup, filter, shelf, spoons, funnel and the tea container. The most important is Sand-Fired pot which gives the whole process the traditional Chinese look.

Storage:

Get sealed and put in the cool cold place or refrigerator, with the tempreture of 0-18 degrees(Attention must be paid to: make sure the tea is sealed up, meanwhile can not put together with another odor, in case of taint of odour.
