The very best parcels within the estate were first handpicked, before the remaining fruit was gently destemmed in the field. Minimal intervention was key with this new wine. 20% whole-bunches were included in the bottom of the small open top fermenter, with the remainder destemmed, whole berries tipped over the top. A long, cool ferment ensued with minimal pump overs and gentle pigeage. The wine spent 18 months ageing in new (20%) and used French barriques (80%). The resulting wine is bright in colour, with vivid purple hues. Intense, lifted, aromatics include blackberry, violet, dried herb, and spice. The palate shows juicy fruit weight, with the silky, slightly chalky tannins and bright acidity adding structure and driving length.
