Easy Recipe - feeds 6 people - ready in 40 minutes:
- Add 2 teaspoons of olive oil to a pan
- Lightly heat and add the contents of the bag
 - Gently coat the ingredients in the oil, on a low heat, for about 2-3 minutes
- Add 2 liters (0.5 gallon) of water and boil on a medium heat for 30 minutes
- Let it simmer for another 10 minutes - taste to make sure rice/einkorn is soft.

About Bulgarian rice:
Once upon a time, many years ago, in the distant 14th century, in the current borders of the Bulgarian state along the Maritsa and Tundzha rivers, rice cultivation began. During the times of socialism, irrigated rice fields were built in the region of Pazardzhik, Plovdiv and Stara Zagora. Thus, rice production reached its golden years - in the 1980s, 250,000 decares were sown per year.
In the 1990s, however, rice production declined, reaching only 14,000 decares in 1995. After 2000, a gradual revival of the sector began, and today half of the cultivated areas from the golden years of Bulgarian agriculture have been restored.

About Bulgarian einkorn:
Bulgarian limetz (einkorn) /Latin: Triticum boeoticum/ is the ancestor of all wheat. Limetz is defined as the ancient wheat of the Thracians, the wheat of the pharaohs, the last meal of Christ. It is the most ancient grain - the oldest remains of it are from 18 thousand years ago. Remains of Limets have been found in Thracian tombs, as well as in Egyptian pyramids in various places. It is interesting that the same kind of wheat is found over and over again - so it is now exactly the same as it was before.
Compared to modern wheats, it is much richer in minerals, B vitamins, vitamin E and proteins. The composition and molecule of its gluten are so different that it is recommended even for people suffering from gluten intolerance. In its wild form Limetz can be seen in southern Bulgaria along the Arda River in the village of Rabovo. In the south-western parts of the country and in the eastern parts of the Rhodopes, Limetz grows in the mountains. If we didn't know it, we could take it for an ordinary weed growing by the side of the road. The lime has a thin strong stem, over a meter high. Its spike is compact, and the grain is hidden in tight-fitting sheaths. In our polluted modern world, Limetz stands as a monument - a memory of humanity's clean and healthy past.

The Rose has always been a symbol of beauty, youth and health.  This royal plant has a special place in people’s hearts from ancient to modern times and is part of romantic stories, legends and tales, which intrigue readers to this very day.  The unparalleled aroma, delicate tenderness and unique qualities of this nature’s gift bring the feeling of luxury, health and happiness.  Having journeyed from India and Persia, through many countries and uncertainties, the rose has found its home in the mild climate and fruitful land tucked in between the sunny mountains of central Bulgaria.  This is one of the few places on earth blessed with perfect conditions for growing the oil bearing rose - Rosa Damascena.   In this region, known as the Rose Valley, production of rose oil dates back to the 16th century, while in the 19th century Bulgaria becomes the world leader in its manufacturing.  The Rose is closely tied to Bulgaria, as it is present in different symbols of the country.  Each year during the rose harvesting months of May and June, the rose carnivals tell the ancient traditions of flower gathering and oil making - traditions saved to this very day. The Bulgarian Rose has a deep and strong aroma and from its flower we produce the finest rose oil.  The gathering of the rose petals is a very delicate and labor-intensive process as it is done by hand while exercising great care.  This occurs in the early hours of the morning, just as the flowers are blossoming and the essential oil they contain is as its highest concentration. Over 3000 kilograms of hand-picked rose petals are needed to produce just 1kilogram of rose oil.
