Bulgarian limetz (spelt, einkorn) /Latin: Triticum boeoticum/ is the ancestor of all wheat. Limetz is defined as the ancient wheat of the Thracians, the wheat of the pharaohs, the last meal of Christ. It is the most ancient grain - the oldest remains of it are from 18 thousand years ago. Remains of Limets have been found in Thracian tombs, as well as in Egyptian pyramids in various places. It is interesting that the same kind of wheat is found over and over again - so it is now exactly the same as it was before.
Compared to modern wheats, it is much richer in minerals, B vitamins, vitamin E and proteins. The composition and molecule of its gluten are so different that it is recommended even for people suffering from gluten intolerance.

In its wild form Limetz can be seen in southern Bulgaria along the Arda River in the village of Rabovo. In the south-western parts of the country and in the eastern parts of the Rhodopes, Limetz grows in the mountains. If we didn't know it, we could take it for an ordinary weed growing by the side of the road. In our polluted modern world, Limetz stands as a monument - a memory of humanity's clean and healthy past.
