Giant Smilyan beans grown organically without the use of agricultural chemicals, along the upper reaches of the Arda River in the pristine Rhodope Mountain, Bulgaria - an area with a typical mountain climate, where the autumn-winter season is relatively mild and the summer is cool. Other factors that predetermine the unique quality of Smilyan beans are the high altitude and pure mountain air and natural humidity.

Because it is completely worked by hand in a tiny geographic area, the total current production is limited to only about 30 tons per year..

Method of use:
Suitable for a variety of salads, soups and stews. In the Rhodopes, it is added to sarmi, peppers, pies, etc. Try the unique breaded fried giant beans nuggets recipe - veggie nuggets with unbelievable taste! (let me know if it's not available in your language online, and i'll send it to you).

Preparation: Soak the beans in cold water for 8 hours. Drain and rinse. Boil in a ratio of 1:3 until soft. It is recommended to change the water after it boils for the first time.

Giant Smilyan beans is one of the few Bulgarian foods protected by an international patent for a word mark concerning its cultivation in the area of the upper reaches of the Arda River in Bulgaria. Local residents call it by the name fasulyovitsa. Bean growing traditions in the area date back more than 250 years. The specific soil conditions, the high humidity of the air, determined by the proximity of the Arda River, the temperature limits and the quality of the water, characteristic of the area of the village of Smilyan, are suitable for growing beans. 
Smilyan beans have a unique taste and are famous both in Bulgaria and abroad. The cultivation method has traditionally been preserved for generations. Gardens are cultivated by hand in an old-fashioned way, fertilized with natural manure. 
Only up to 30 tons of Smilyan beans are grown annually in the area of the upper reaches of the Arda River.
