Questo Pecorino appartiene ad un'antica ricetta, la quale prevedeva l'immersione nel vino del Formaggio duro per essere ammorbidito.
Il Pecorino, seppur duro, assorbe così durante una stagionatura di 18 mesi, il sapore del vino regalando al Formaggio un sapore unico al palato, da qui il nome Pecorino Ubriaco.
Il vino utilizzato per "far ubriacare" questo pecorino è il Merlot.
Consigli: la miglior tentazione del Pecorino Ubriaco è quella di assaporarlo "nudo e crudo", ma lasciati sorprendere grattugiandolo sulla pasta; in abbinamento raccomandiamo un calice di Montefalco Rosso D.O.C. oppure di Amelia Rosso Riserva D.O.C.
This Pecorino is made following faithfully an ancient recipe, according to which the hard cheese had to be soaked in wine for it to soften.
In this way, during the whole periond of aging that took up to 15 months, the pecorino would absorb the wine and thus acquire the unique fruity and sweet flavour that characterises the Pecorino Ubriaco.
Serving suggestions: one's temptation is to taste it as it is, without any accompaniment but let it surprise you as grated cheese for pasta dishes.
Accompaniment: excellent with a glass of Montefalco Rosso D.O.C. or Amelia Rosso Riserva D.O.C.
Diese Sorte von Hartkäse wird hergestellt indem man den Pecorino während seinem Reifeprozess mit Rotwein übergieß, daher auch sein witziger Name der auf Deutsch “betrunkener” bedeudet.
Das Ergebnis ist ein einzigartiger Käse mit einer violetten Rinde, goldgelbem, schnittfestem Innere und ein intensives Aroma mit Noten von Weinduft.
Wie wird es serviert: als Antipasto, mit Paninis, zu Salaten, zum Überbacken zu einem leckeren Rotwein.
