cookbooks ever published. While the identity of the author is never revealed,
he is generally referred to as Menon. While much better known for ‘La Cuisiniere Bourgeoise’, one of the
best-known and oft reprinted cookbooks, he also published a confectionary
cookbook, “La Science du maître d’hôtel”.
This book contains over 600 recipes for jams and jellies, marmalades and
preserves, mousse, ice cream, syrups, biscuits and cookies, and much more!
This impressive 1750 first edition was published in Paris by Paulus-du-Mesnil.
