The Kaji series is a higher quality version of the popular Shun series.
The core material is a blade steel called Super Gold 2 (SPG2), which contains a large amount of highly alloyed components such as molybdenum and vanadium through powder metallurgy to achieve extremely high hardness, toughness, wear resistance, and corrosion resistance.
The long blade can cleanly cut stringy or fibrous materials. Also, vegetables can be easily chopped by using the handle and blade tip as a pendulum.
