You are buying a Maxim MAX31856 breakout board for 3.3V systems.  The datasheet for MAX31856 can be found on Maxim's web site (sorry, eBay doesn't allow links).

The MAX31856 is the latest thermocouple IC from Maxim, and is significantly better than the MAX31855:
  • 19-bit temperature resolution (MAX31855 is only 14-bit)
  • Handles all thermocouple types (K, J, N, R, S, T, E, and B)
  • Allows readings as high as +1800°C and as low as -210°C depending on thermocouple type
  • Line frequency filtering of 50Hz and 60Hz is included
  • Many configuration options, like number of samples to average, fault masking, fault triggering etc.

You also get a low-mass, highly responsive k-type thermocouple probe capable of measuring -50°C to 700°C (-58°F to 1292°F).
