Product description:

Flower shaped cookies or Dok Jok is Thai traditional dessert since ancient time. The taste is delicious, sweet, aromatic and crispy. Dok Jok dessert originated from Thai villager’s idea to make a snack in aquatic plant shape. Dok Jok dessert was famous in many Thai rituals such as wedding, ordination or new house ceremony etc. Nowadays, Dok Jok dessert is very rare. Now, you can make the legendary dessert by your own. How to make Flower Shaped Cookies or Dok Jok Dessert

Ingredients:

1. 1. Rice flour                  100 grams or 1 cup

2. 2. Kite Brand flour         55 grams or 1/2 cup

3. 3.  Cassava starch          100 grams or 1 cup

4. 4. Clear lime juice          180 grams or 3/4 cup

5. 5. Water                       110 grams or 1/2 cup

6. 6. Yolk egg                    17 grams or 1 egg

7. 7. Vegetable Oil             10 grams or 1 table spoon

8. 8. Salt                           4.5 grams or 1 ½ tea spoons

9. 9. Sugar                        50 grams or 5 table spoons

        10. Black & White Sesame    40 grams or 4 table spoons

   11. Vegetable oil for frying   1,500 grams or 7 1/2 cups

Method of Preparation:

-      - Sieve rice flour, Kite Brand flour and put in cassava starch all together and transfer into a mixing bowl. Add clear lime juice and stir      and add yolk of egg, vegetable oil, salt, sugar and sesame to mix thoroughly.

-     -  Put the oil heated, immerse the mold in the hot oil until it is extremely hot. Raise it from the pan and place on the straw fiber to get    rid of the excess oil at the bottom of the mold. Then put the mold into the flour. Be careful don’t dip the entire mold into the flour, just immerse about 90% the depth of the mold. Then immerse the mold with flour into hot oil pan, ensuring the mold dip into the oil only half of the mold’s depth until the flour start to harden, then immerse the whole mold into the pan’s bottom. Shake the mold slowly until the flour come off and fry the cookie until it turns golden yellow. Use a ladle to place the cookies on the paper in order to get rid of the excess oil. When the cookies cool down, put them in the container with lid.

Remarks

-     - Unless the mold is hot enough, the flour will not catch the mold.

-     - Once put the mold into the flour, then put it into the hot oil immediately, the flour will come off the mold and the cookie will be free.
