Offered Here is a size 20 (20 scoops to a quart) Gilchrist #31 Ice Cream scoop. It is nickel over brass with a wood handle. This is the #31 Gilchrist scoop.  It is clearly marked for size 20 on the scraper or wiper blade. This scoop measures 11" in length and is in working order. It does have some normal use and wear marks. I have not cleaned and it was only displayed in my collection of scoops. 

The Gilchrist Company of New Jersey was the maker of many different ice cream scoops from 1906 to the 1930s. They produced high quality scoops.
