Description

Tagetes minuta belongs to the Asteraceae family and is commonly known as: Huacatay. This Annual plant is native to South America, can reach a meter and a half high and seventy centimeters wide. It has lanceolate, jagged leaves and a strong smell. It is used in Peruvian cuisine as a condiment in the preparation of meals. For the preparation of a huacatay sauce, only fresh, hand-picked leaves without stems are used. The leaves can be ground in mortar or liquefied with oil. Dried leaves almost completely lose their aroma and flavor.
